Monk's Cafe Grand Cru is a blend of 3 (!) year-old and freshly brewed tripel ale. This blend is aged for a further 6 months in oak barrels, where it develops its characteristic sour profile. A light brew is added to the blend before bottling, resulting in a reasonable 5.5%.
